1. Prepare the cucumber salad: In a bowl, combine the prepared cucumber, red onion, and tomato. Drizzle with extra virgin olive oil and red wine vinegar, then season with salt and pepper. Toss well and set aside to allow the flavours to marinate.
2. Toast the wraps: Heat a dry frying pan over medium-high heat. Place the tortilla in the pan for about 1–2 minutes on each side, or until lightly browned and warm.
3. Assemble the wraps: Lay the toasted tortillas flat. Spread a generous layer of hummus on each one, followed by a handful of spinach. Spoon the dressed cucumber salad on top, then sprinkle with crumbled feta.
4. Serve: Roll or fold the wraps, then serve immediately.
