1. Preheat oven to 180°C (fan) or 200°C (conventional). Line a square baking pan with parchment paper.
2. In a small bowl, toss the diced apples with lemon juice and set aside.
3. In a medium mixing bowl, stir together oats, oat flour, cinnamon, and salt. Stir in the maple syrup and melted butter until well combined.
4. Press 2/3 of the oat mixture into the prepared pan, spreading it evenly to form a base. Spread the apples evenly on top. Sprinkle the remaining oat mixture over the apples and gently press it down.
5. Bake for 30 minutes, then check the texture of the bars. If they're not golden and set, continue baking in 5 minute intervals.
6. Allow the bars to cool completely in the pan before slicing into 9 equal squares!
