Ingredients

  • 100g quinoa, rinsed and cooked
  • 1 × 400g tin chickpeas, drained and rinsed
  • 1 medium sweet potato, peeled and diced
  • 150g cherry tomatoes, halved
  • 1 ripe BE Exotic! avocado, sliced
  • 2 large handfuls DOLE® GO Organic! baby spinach
  • ½ DOLE® GO Organic! lime, to serve
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • Optional: black sesame seeds for garnish

Method

  1. Roast sweet potato at 200°C (fan 180°C) for 20–25 mins with olive oil, salt, and pepper.
  2. Roast chickpeas on a separate tray for 20 mins.
  3. Cook quinoa in water (2:1 ratio) for 12–15 mins until fluffy.
  4. Arrange quinoa, spinach, roasted veg, tomatoes, and avocado in bowls.
  5. Squeeze over lime and garnish.
