Ingredients
- 100g quinoa, rinsed and cooked
- 1 × 400g tin chickpeas, drained and rinsed
- 1 medium sweet potato, peeled and diced
- 150g cherry tomatoes, halved
- 1 ripe BE Exotic! avocado, sliced
- 2 large handfuls DOLE® GO Organic! baby spinach
- ½ DOLE® GO Organic! lime, to serve
- 1 tbsp olive oil
- Salt and black pepper, to taste
- Optional: black sesame seeds for garnish
Method
- Roast sweet potato at 200°C (fan 180°C) for 20–25 mins with olive oil, salt, and pepper.
- Roast chickpeas on a separate tray for 20 mins.
- Cook quinoa in water (2:1 ratio) for 12–15 mins until fluffy.
- Arrange quinoa, spinach, roasted veg, tomatoes, and avocado in bowls.
- Squeeze over lime and garnish.
