Ingredients

  • 250g short pasta (fusilli, penne, or shells)
  • 1 ripe DOLE BE Exotic!® avocado, diced
  • 150g blanched green beans
  • A handful of fresh GO Organic! spinach
  • Juice of 1 lemon
  • 2 GO Organic! garlic cloves, crushed
  • 2 tbsp olive oil
  • Salt & black pepper to taste
  • Optional: crumbled feta or sunflower seeds for crunch

Method

  1. Cook pasta, drain, and cool under cold water.
  2. In a blender, blend the avocado with lemon juice, olive oil, spinach, garlic, salt and pepper.
  3. Toss the cooled pasta with avocado dressing and greens.
  4. Top with feta or seeds if using, and serve chilled or at room temp.
