DOLE BE Exotic!® Creamy Avocado Pasta Salad

Ingredients
- 250g short pasta (fusilli, penne, or shells)
- 1 ripe DOLE BE Exotic!® avocado, diced
- 150g blanched green beans
- A handful of fresh GO Organic! spinach
- Juice of 1 lemon
- 2 GO Organic! garlic cloves, crushed
- 2 tbsp olive oil
- Salt & black pepper to taste
- Optional: crumbled feta or sunflower seeds for crunch
Method
- Cook pasta, drain, and cool under cold water.
- In a blender, blend the avocado with lemon juice, olive oil, spinach, garlic, salt and pepper.
- Toss the cooled pasta with avocado dressing and greens.
- Top with feta or seeds if using, and serve chilled or at room temp.
