How do you prepare potatoes?
Russet potatoes have a dry, fluffy texture and have long been the staple for the most widely used and versatile potato variety. Peel them for dicing or cook with skins on. Red potatoes have thin skins and a waxier texture which make them excellent for roasting, boiling or salads. Gold potatoes have thin skins and their versatility makes them excellent for roasting, boiling, and mashing with skins on. White potatoes are considered an all-purpose potato. Peel away the potato skin and remove any dark spots caused by bruising.
How do you store potatoes?
Store in a cool, dry, dark, and well-ventilated place for up to 4 weeks. Do not refrigerate because cold temperatures turn the starch in potatoes to sugar.
