Ingredients
- 6 small flour tortillas
- 1 ripe DOLE BE Exotic!® avocado, diced
- 1 pack DOLE® GO Organic! Corn, boiled
- 3 DOLE® GO Organic! red onions, finely chopped
- Juice of 2 DOLE® GO Organic! limes
- A handful of fresh coriander (optional)
- 500g mince meat (or meat substitute)
- 3 tsp paprika
- 1 1/2 tsp cumin
- Salt & pepper to taste
Method
- Toss corn, red onion, avocado, lime juice, and coriander in a bowl.
- Heat oil in a pan, add mince, paprika, cumin, salt, and pepper. Cook over medium heat for 6–8 mins until browned and cooked through. Set aside.
- Season with salt & pepper
- Warm tortillas briefly in a dry pan or wrap in foil to heat.
- Spoon filling into tortillas and serve immediately.
