Pineapple and avocado sandwich

Ingredients

  • 300g pineapple
  • 1 tbsp raspberry vinegar
  • 2 tbsp olive oil
  • 10 radishes
  • 50g red beet sprouts
  • 1 green chilli
  • 1 avocado
  • some lime juice
  • some salt and pepper
  • 4 slices of wholegrain bread

Method

Peel and slice the pineapple and then drizzle it with raspberry vinegar and oil. Clean the radishes and slice them thinly. Wash the sprouts.

De-seed and finely chop the chilli. Halve the avocado, remove the stone and use a spoon to take out the flesh. Then mash this using a fork and mix with the lime juice, chilli, salt and pepper.

Spread the mashed avocado over the wholegrain slices of bread. Then cover the slices of bread with pineapple, radishes and sprouts before drizzling with lime juice.

Tips & tricks

For an extra portion of crunchiness, simply cut a cucumber into small pieces and scatter these over the sandwiches.

Et voilà: a deluxe sandwich!
