Ingredients
- 1 pack DOLE GO Organic! vine tomatoes
- 1 clove DOLE GO Organic! garlic, minced (plus 1 whole clove for rubbing)
- A handful of fresh basil leaves torn
- 1–2 tbsp extra virgin olive oil
- 1 tsp balsamic vinegar
- Salt & black pepper, to taste
- 1 baguette or loaf of rustic sourdough, sliced and lightly toasted
- 1 small organic red onion or shallot, finely chopped
Method
- Mix diced tomatoes, garlic, basil, olive oil, onion and balsamic in a bowl.
- Season with salt and pepper.
- Toast bread slices and rub with a cut garlic clove.
- Spoon tomato mix on top just before serving.
